Krumbein Rationell slicers used for cutting cakes or products
longitudinal blades are equipped with an innovative cutting knife system consisting of two
serrated blades moving alternately towards each other. Such technology
allows for precise cutting of products without damaging their structure. Knives
are heated and their temperature is smoothly regulated. This allows us to cut
products slightly frozen or covered with a brittle material, such as chocolate.
Thanks to computer control, we can enter 64 ready-made programs into memory
work. Within each program, we can set any number of such parameters
such as: product diameter and height, cutting speed (in the initial, middle and
final temperature separately), the speed at which the knife leaves the product, knife temperature, depth
cutting (complete cut or only a shallow cut), frequency of knife cleaning.
